I am just starting to bake with Konjac Glucomannon Flour. How much can I use this as a replacement for Wheat flour or Corn Meal? 1/4 cup or less. Also, If I was trying to make a low-carb Tortilla with Almond Flour and Chia Seed Flour wouldn’t Konjac Glucoman Flour be a good binder?

PS. Cannot use Gluten Flours, Soy, or Corn. . .have allergies to these.
When you use Konjac Glucomannan flour you just want to use a small amount, it is used for added fiber and/or as a thickening agent for recipes. You can use the Konjac flour instead of corn starch, one teaspoon acts more like 10 teaspoons of corn starch. Almond flour is an excellent option for a low carb flour and yes Konjac would make an excellent binder for the tortillas. Let me know how they turn out.
